    Ask the Chef - Superfoods and a Gluten-Free Diet

    Good news for the gluten-free community: not only are Navitas Naturals superfood ingredients 100% gluten-free, but they can be used to enhance gluten-free recipes as well. You may notice that even our wheatgrass powder is in fact gluten-free - although it originates from the wheat plant, Navitas wheatgrass powder is made from 100% wheatgrass juice and does not include the wheat germ, which is where the gluten is.

    When it comes to baking (arguably an issue at the core of the gluten-free cooking conundrum) many people following a gluten-free diet are especially adept at creating nutritious flour blends that can take place of a wheat or other glutenous grain flour. Of course, I think these flours are a perfect place to sneak in a spoonful or two of nutrient-dense superfood powder, such as maca powder or hemp powder too!

    One of the biggest issues that GF bakers must overcome is replicating the binding action that gluten is responsible for - in other words, keeping all those crumbs together in the form they were baked in. By combining different types of flours - some for flavor, some for function -- it's impressive how masterfully (and easily) one can bake without gluten. And, among the favorite tricks to alleviate this binding issue is including flaxseed powder and chia seed powder, which do a fantastic job of keeping baked goods together, and add fiber without imparting flavor.
