When it comes to baking (arguably an issue at the core of the gluten-free cooking conundrum) many people following a gluten-free diet are especially adept at creating nutritious flour blends that can take place of a wheat or other glutenous grain flour. One of the biggest issues that GF bakers must overcome is replicating the binding action that gluten is responsible for - in other words, keeping all those crumbs together in the form they were baked in. By combining different types of flours - some for flavor, some for function -- it's impressive how masterfully (and easily) one can bake without gluten. And, among the favorite tricks to alleviate this binding issue is including flaxseed powder and chia seed powder, which do a fantastic job of keeping baked goods together, and add fiber without imparting flavor.
