    Why You Should Be Grateful Today and Every DayFeeling gratitude is something that both comes easily to me, and yet sometimes takes effort. Life can be stressful and challenging, and in those moments, it is more of an exercise to return to a state of gratitude. But most of the time, I can easily find something for which to be grateful and I believe that mindset is an important part of maintaining a well-balanced, healthy life.


    I find that if I take the time to express gratitude throughout the day, my head feels clearer, my heart feels lighter and I even sleep better! Gratitude is not just acknowledging the incredible abundance and opportunity in my life, but also the air in my lungs and people in my world who bring out the best in me.


    As a cooking instructor, cookbook author and recipe developer, I am fortunate to have lots of nutritious and delicious food at my fingertips every day. I find gratitude in the ability to not only be able to purchase and access nourishing ingredients, but also to cook with them, and feed my friends, students and family in a safe, clean, happy environment. There are times when I open a perfect avocado and I just have to take the time to stop and appreciate all the beauty that nature gives us. I am grateful for my local farms that bring fresh produce to my farmers market every week, and the hard work and time they put into making their fruits and vegetables so delicious and perfect.
