    Winter Superfood Salad Boosters

    You can't go wrong with a kale salad that's loaded with superfoods, antioxidants, protein, fiber, healthy fats, vitamins and minerals. You can serve Raw Massaged Kale Salad with Turmeric Tamari Almonds & Goldenberries for lunch or dinner anytime of the year, but it's extra satisfying in the winter when you're craving a hearty green bowl of goodness.

    Unlike other kale salads that are often tough to chew and digest, this salad has tender leaves that are massaged by using your hands to rub the olive oil into the leaves. The massaging is a crucial step in this recipe and allows the leaves to turn a dark green color while they become soft to touch.

    This green salad is tossed together with goldenberries and almonds, two of my all-time favorite ingredients to add a kick of flavor, nutrition and crunch. Almonds are full of protein, vitamin E, magnesium and other minerals. The Navitas Naturals Turmeric Tamari Almonds in this salad are seasoned with turmeric and tamari, which add a lovely savory taste to each bite.

    Turmeric is a part of the ginger family and is a wonderful anti-inflammatory agent used to treat a wide range of health issues. It's rich in manganese and iron as well as an excellent source of vitamin B6, potassium, vitamin C, magnesium and fiber. Turmeric is effective even in small doses which is why these almonds are a great option for a snack or to toss into your salad and whole grain dishes. Tamari is a gluten-free version of soy sauce; it's a byproduct of fermented soybeans but the main difference between soy sauce and tamari is that there is no wheat in tamari. The sauce is richer in flavor than soy sauce and a bit less salty than traditional soy sauce. The fresh-tasting goldenberries are full of vitamins, antioxidants and fiber; they lend a naturally sweet taste to this salad - without any added sugar.

    Serve leftover salad stuffed into roasted acorn squash or pumpkin with quinoa or wild rice in the winter for a well-rounded and hearty meal.     Ways to Use Turmeric Tamari Almonds
    - Toss a handful of almonds into a bowl of whole grains such as quinoa, buckwheat, millet or teff for a crunchy texture boost.
    - Grind almonds in a food processor for 45 seconds and use the mixture as a garnish for hummus.
    - Add almonds to a small container and snack on them throughout the day when you're hungry for a dose of healthy fats and protein to hold you over until your next meal.

    - Add goldenberries to salads for a touch of natural sweetness without having to add refined sugar from processed salad dressings.
    - Toss goldenberries into guacamole for a sweet and chewy addition to a silky dip.

    Massaged Kale Salad with Turmeric Tamari Almonds and Goldenberries
    (Serves 4)

    1 large head curly kale, finely chopped and stems removed
    3 Tbsp. extra-virgin olive oil, divided, plus more if needed
    1 large honey crisp apple, diced
    1 tsp. finely chopped fresh tarragon
    4 Tbsp. Navitas Naturals Turmeric Tamari Almonds
    2 Tbsp. Navitas Naturals Goldenberries
    Juice of 1 large fresh lemon
    ¼ tsp. fresh lemon zest
    Sea Salt and freshly ground Pepper, to taste

    In a large bowl, combine the kale and 2 Tbsp. oil and use your hands to massage the kale until the leaves become soft and dark green, about 2 minutes. Add the apple, tarragon, Turmeric Tamari Almonds and Goldenberries. Drizzle with the lemon juice, remaining 1 Tbsp. oil, lemon zest, salt and pepper to taste. Gently toss to combine and season to taste. Add more olive oil, if needed. Serve immediately.
